Ántimes is a quietly expressive white wine, shaped more by patience than intervention. The name itself is a tribute to the unique terroir where the vines grow — a Mesozoic anticline (anticlinale mesozoica, shortened to “Anti-Mes”) — an extremely gravelly, mineral-rich landscape that defines the wine’s natural tension and clarity. Grown in the hills of Gubbio at 600 metres above sea level, it comes from 80–90-year-old vines rooted in calcareous soils, where freshness and precision come naturally.
A traditional field blend led by Trebbiano Toscano, Malvasia di Candia and Malvasia Lunga Bianca, the grapes are hand-harvested, briefly macerated on the skins and fermented spontaneously, with minimal sulphur and no filtration. Ageing in vitrified cement preserves purity while allowing subtle texture to emerge.
The wine opens with white flowers, citrus peel and dried herbs, followed by a fine saline edge and a gentle almond bitterness on the finish. Precise, savoury and quietly complex, Ántimes sits comfortably between tradition and instinct — a white wine that feels alive in the glass, yet effortlessly balanced at the table.
